Creamy turmeric-ginger carrot soup
This creamy turmeric-ginger carrot soup is delicious and full of flavors! It is packed with powerful anti-inflammatory agents, vitamins A and K, and many other important vitamins and minerals! It is also great for digestion (bloating, gas, and heartburn)!
Ingredients
Serves: 4
- 2 tablespoon olive oil
- 1 large onion chopped
- 3 cups chopped carrots
- 1 cup chopped sweet potatoes
- 3 garlic cloves, minced
- 1 tablespoon grated ginger
- 1 tablespoon of Nia Golden Turmeric powder
- 400ml (13.5 oz) Unsweetened Coconut cream
- Salt & black pepper to taste
Recipe Preparation
Heat the olive oil in a large saucepan.
Heat the olive oil in a large saucepan.
Add the chopped onions, garlic and ginger and sauté the mix over medium heat for about 3 minutes, stirring often.
Add Nia Golden Turmeric mix and mix well with the vegetables.
Add coconut milk. Bring the mixture to a boil, cover and let it simmer on low to medium heat until vegetables are tender for about 15 to 20 minutes.
Once the soup is cooked, add it to a blender or use an immersion blender and blend until creamy.
Taste and adjust seasonings to your taste.
Serve immediately with a dollop of coconut yogurt and enjoy!
