Nia Golden Turmeric Lentil Veggie Burgers
These turmeric vegan burgers are delicious, and perfect for a healthy family dinner.
Ingredients
- 1 1/2 cups cooked lentils
- 3 tablespoon olive oil (divided)
- 1 medium onion chopped
- 1/4 cup chopped cilantro
- 3 tablespoon tahini paste
- 1 carrot peeled and shredded
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground black pepper
- 1 teaspoon of Nia Golden Turmeric Latte
- 1/4 cup bread crumbs
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 4 burger buns
- 1 large tomato sliced
- 1/2 cup baby spinach or lettuce
- 1 small cucumber sliced
- Ketchup, mustard or other dressing of choice
Recipe Preparation
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the onion and cook until onion is softened. Set aside to cool slightly.
Place the cooked onion and the remaining of all the burgers ingredients in food processor and pulse until coarsely chopped.
Adjust the salt to your taste. Divide the mixture into 4 patties and pack well.
Heat the remaining olive oil in a large skillet over medium-high heat. Place patties on the skillet and cook for 4 to 6 minutes per side until golden brown and crispy on the outside.
Slice each burger bun in half and lightly toast under the broiler or grill. Assemble burgers using the spinach, tomatoes, cucumbers and the dressings.
Serve immediately.
